Yogurt Mint Chicken
Heavenly chicken marinated in a yogurt mint sauce with a hint of spice

- 8 pieces of chicken drumsticks and thighs
- salt
- pepper
Marinade
- 1/2 cup mint leaves
- 1/2 cup yogurt
- 3 large cloves garlic
- zest of 1 lemon
- 1 tbsp honey
- 1 tbsp ground coriander
- 2 tspn ground cumin
- 1/2 tspn cayenne pepper
- 1/2 tspn chilli flakes
- juice of half lemon
Marinade
Add all the ingredients, except the lemon zest, to a blender and blend into a smooth paste. You don't have to blend the ingredients if you don't have a blender. You can marinate the chicken with the ingredients as is
Add the chicken to a large bowl and mix in the marinade and the lemon zest. Refrigerate for 30 minutes
Shake off the excess marinade. Place the chicken on the braai or in an ovenproof dish and roast for about 45 minutes to 1 hour or until chicken is cooked and juices run clear. Baste the chicken with the excess marinade a couple of times
If you are cooking it in the oven cover a baking pan with foil. Place a wire rack over the baking sheet, shake any excess marinade off and place the chicken on the rack
- You can serve this chicken with some potatoes and a salad
- If you want a little more heat you can add a little more cayenne pepperÂ
- You can add a little light olive oil or vegetable oil before cooking the chicken
