Yogurt Mint Chicken

Heavenly chicken marinated in a yogurt mint sauce with a hint of spice

Ingredients

  • 8 pieces of chicken drumsticks and thighs
  • salt
  • pepper

Marinade

  • 1/2 cup mint leaves
  • 1/2 cup yogurt
  • 3 large cloves garlic
  • zest of 1 lemon
  • 1 tbsp honey
  • 1 tbsp ground coriander
  • 2 tspn ground cumin
  • 1/2 tspn cayenne pepper
  • 1/2 tspn chilli flakes
  • juice of half lemon

Instructions

  • Season chicken with salt and pepper and set aside

Marinade

  • Add all the ingredients, except the lemon zest, to a blender and blend into a smooth paste. You don't have to blend the ingredients if you don't have a blender. You can marinate the chicken with the ingredients as is
  • Add the chicken to a large bowl and mix in the marinade and the lemon zest. Refrigerate for 30 minutes
  • Shake off the excess marinade. Place the chicken on the braai or in an ovenproof dish and roast for about 45 minutes to 1 hour or until chicken is cooked and juices run clear. Baste the chicken with the excess marinade a couple of times
  • If you are cooking it in the oven cover a baking pan with foil. Place a wire rack over the baking sheet, shake any excess marinade off and place the chicken on the rack

Notes

  1. You can serve this chicken with some potatoes and a salad
  2. If you want a little more heat you can add a little more cayenne pepper 
  3. You can add a little light olive oil or vegetable oil before cooking the chicken
