Strawberry Eton Mess

This sublime dessert is so easy you can have it any day of the week

Ingredients

  • 100g meringues you can add more meringue if you prefer
  • 1 cup/250ml fresh cream whipped
  • 250g strawberries or mixed berries

Strawberry sauce

  • 9 strawberries See note 3
  • 2 tspn castor sugar

Instructions

  • Whip the fresh cream until soft peaks form. Be careful not to overmix
  • Set aside 9 strawberries from the 250 gram. Chop up the strawberries.
  • Break the meringues into pieces, you can keep some whole to decorate if your prefer.
  • Place all the ingredients in a large bowl and gently fold them. Serve immediately. You can decorate them with more strawberries and meringue.

Strawberry Sauce

  • Chop the 9 strawberries in halves. Place in a blender with the castor sugar and blitz until it's a smooth sauce

Layering

  • You can add a layer of the cream mixture at the bottom of a glass, drizzle some strawberry sauce over, add another layer of cream mixture, another drizzle of sauce and top up with more of the cream mixture. Decorate as desired

Notes

  1. You can use any store bought meringue or you can make your own
  2. You don't have to use the sauce, mixing everything together and serving them in a bowl is perfect
  3. The strawberry sauce is totally optional. It tastes great with or without the additional sauce
  4. My strawberries were quite small so I used 9 for the sauce, if you have larger strawberries you can use less
