Spicy Rice

This rice is full flavoured and super delicious. Serve with any protein of your choice and you will be in heaven

Ingredients

  • 1 cup/250ml basamati rice
  • 1 tablespoon butter
  • few drops olive oil
  • 1 small onion finely diced
  • 1 garlic clove minced
  • 1 carrot finely diced
  • 1/2 red pepper finely diced
  • 1/2 cup fresh or frozen peas
  • 1 teaspoon chilli powder
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon oregano
  • 1 tablespoon tomato paste
  • 1 knorr chicken stockpot
  • 2 cups hot water
  • salt only if required

Instructions

  • Rinse the rice a few times until the water runs clear. Drain and set aside
  • Heat the butter and a few drops of oil in a pot. Add the onion, garlic, carrots and red pepper and saute until the onion is translucent
  • Add the chilli powder, paprika, turmeric, oregano and tomato paste. Mix well and cook for a few seconds
  • Add the rice. Mix the Knorr stockpot in the hot water and add to the rice.
  • Bring to a boil. Lower the temperature, cover the pot and allow to simmer on low heat until rice is cooked and all the water has been absorbed. This takes about 30 minutes. In the last 5 minutes of cooking time add the peas. Mix it in gently just so it sinks into the rice a little
  • Allow the rice to stand for 5 minutes and fluff with a fork

Notes

  1. You can use any brand of basmati rice or long grain rice
  2. If you don't have Knorr stockpot you can use 1 teaspoon of stock powder 
  3. I prefer just one cup of stock if you are using liquid stock as I find most stock too salty. I also don't add salt to my rice unless I need it
  4. You can use a cup of frozen vegetable if you don't have the veggies mentioned in my recipe
