Spicy Masala Omelette

Such a quick and easy indian inspired omelette and delicious too

Ingredients

  • 3 eggs beaten
  • 1 tbsp butter
  • 1 small onion finely chopped
  • 1 small tomato diced
  • 1 green chilli finely chopped
  • 1 tsp chilli powder
  • 1/2 tsp ground cumin
  • 2 tbsp fresh coriander chopped
  • salt
  • pepper
  • 1/2 cup grated cheddar or mozarella cheese (optional)

Instructions

  • Beat the eggs and mix it with all the other ingredients, except the butter. Season with salt and pepper
  • Heat the butter in a pan, add a few drops of oil to prevent burning
  • Pour half the mixture into the pan and allow it to fry on medium heat until the edges are golden brown and crisp
  • Flip it over and sprinkle some cheese on top
  • Once the other side is cooked and slightly golden brown remove from the pan. Repeat with the other half of the mixture
  • Garnish with some chilli and coriander and serve hot, with some bread rolls or toast if you prefer

Notes

  1. You can use any cheese of your choice or omit the cheese
  2. If you want a bigger omelette you can add an extra egg
  3. The spice can also be adjusted according to your preference
