Simple Homemade Custard

- 4 egg yolks
- 1 cup fresh cream
- 2 cups full cream milk
- 1/2 cup castor sugar
- 2 tbsp cornflour/cornstarch
- 1 vanilla pod
Slit the vanilla pod in half and removes the seeds. Place the milk and cream in a sauce-pan and add the vanilla seeds and bean and to it. Bring to a simmer, over medium to low heat
In a separate bowl, whisk together the yolks and sugar until pale. Mix in the cornflour, ensuring there are no lumps
Remove the vanilla pod from the milk and discard. Remove milk from heat. Slowly add half cup of milk into the egg mixture and keep whisking
Strain the egg mixture into the milk and return to a low heat
Use a whisk and stir constantly until the custard thickens, about 2-3 minutes
Cook until the custard coats the back of a wooden spoon, draw a line at the back of the spoon and if the custard doesn't run it's ready
Remove from heat
- You can use vanilla essence/vanilla extract instead of the vanilla pod. I normally use about a teaspoon and a half of vanilla essence
- The custard will thicken on standing
- It can be refrigerated for up to 3 days
