Romany Creams with Chocolate Mousse

This is such a decadent and easy dessert to put together. You can have dessert in a jiffy

Ingredients

  • 1&1/2 cup fresh cream
  • 4 tsp cocoa
  • 200 gram milk or dark chocolate
  • 1 box romany creams biscuits
  • raspberries to serve (optional)

Instructions

  • Place half the box of romany creams in a ziplock bag and use a rolling pin or meat mallet and roughly crush the biscuits. Only crush more if required.
  • Ensure the fresh cream is really cold. Place in a bowl and use a hand held electric mixer and whip the cream to soft peaks
  • Melt the chocolate in the microwave, 20 second increments, and stir until it's smooth. Allow to cool down a little
  • Mix in the cocoa, using the electric mixer
  • Add the chocolate and mix until just incorporated. Do not over mix
  • Use 4 small glasses or ramekins. Layer a little mousse at the bottom. Add a layer of the crushed romany creams. Add another layer of mousse and a sprinkle of Romany Creams. Garnish with some raspberries and a drizzle of chocolate if you wish
  • Refrigerate until serving time

Notes

  1. Please do not over whip the fresh cream, it will loose it's mousse like texture
  2. Ensure your fresh cream is always as cold as possible when whipping and use a narrow, deep bowl. It does whip quicker than when whipped in a large bowl
