Roasted Butternut Salad

A quick, easy and delicious salad that's full of flavour

Ingredients

  • 700 gram butternut cut into cubes
  • 2 tbsp olive oil
  • 1 tsp cinnamon
  • 2 large cloves garlic minced
  • salt
  • pepper
  • 2 tbsp honey
  • 2 tsp fresh thyme
  • 1/3 cup cranberries
  • 1/3 cup pecan nuts
  • 1/4 cup feta cheese crumbled

Instructions

  • Preheat oven to 180 degrees Celsius.
  • Peel and chop butternut into cubes. Mix the cinnamon, salt, pepper, garlic and olive oil with the butternut. Spread on a tray lined with baking paper, single layer and roast for 30-35 minutes until soft and golden brown
  • In the last 5 minutes of cooking time toss the pecans with the butternut and allow it to roast
  • Remove from the oven and stir in the dried cranberries and honey. Sprinkle the crumbled feta and thyme over and serve warm
