Roasted Butternut Salad

- 700 gram butternut cut into cubes
- 2 tbsp olive oil
- 1 tsp cinnamon
- 2 large cloves garlic minced
- salt
- pepper
- 2 tbsp honey
- 2 tsp fresh thyme
- 1/3 cup cranberries
- 1/3 cup pecan nuts
- 1/4 cup feta cheese crumbled
Preheat oven to 180 degrees Celsius.
Peel and chop butternut into cubes. Mix the cinnamon, salt, pepper, garlic and olive oil with the butternut. Spread on a tray lined with baking paper, single layer and roast for 30-35 minutes until soft and golden brown
In the last 5 minutes of cooking time toss the pecans with the butternut and allow it to roast
Remove from the oven and stir in the dried cranberries and honey. Sprinkle the crumbled feta and thyme over and serve warm
