Potato Pizza
This pizza is to die for, chewy crust, loads of potato and cheese with a hint of garlic and thyme

- 1 pizza base
- 1 large potato sliced into thin rounds
- mozarella cheese
- 2 tbsp olive oil
- 1 large garlic clove
- 3 sprigs fresh thyme
- salt
- pepper
Scrub the potato and place it in a pot with some water and boil until tender. A knife should slide through easily. Alternatively slice the potato into thin rounds, about 1/2mm and place the potato in a microwaveable dish with 3 tablespoons of water and cook for 5 minutes. Use your discretion in terms of cooking time if using the microwave
Place the potato rounds on top of the potato base
Mix the olive oil, garlic, thyme salt and pepper and drizzle on top of the potatoes
Place chunks of mozarella cheese randomly on top of the pizza
Bake at 200 degrees Celsius for 10 minutes or until cooked with a golden brown crust
- You can use however much mozarella cheese you prefer. I did not add too much because I already felt guilty about all the carbs
- You can use feta instead of mozarella
