Oyster Mushroom Curry

Ingredients

  • 400 gram oyster mushrooms sliced
  • 3 tbsp olive oil or vegetable oil
  • 1 medium onion thinly sliced
  • 5 green chillies
  • 1 sprig curry leaf
  • 3 large garlic cloves
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • salt

Instructions

  • Heat oil in a large pan on low heat. Add the onion, chilli and curry leaf and saute until onion is translucent
  • Peel the garlic and smash them a little. Slice the garlic and add to the pan. Allow it to fry for about 2 minutes to release the flavour
  • Mix in the turmeric and chilli powder. Add the mushroom and season with salt
  • Cover and cook on medium heat for about 10-15 minutes until any liquid has evaporated and the mushrooms are tender and slightly caramelised.

Notes

  1. Do not wash your mushrooms as it will soak up the water
  2. Too much chilli powder in this dish can be a little overpowering so don't be tempted to add too much. Add more chilli instead, if you prefer more hot
  3. The amount of chilli can be adjusted according to your taste
