One-Pan Sausage Casserole
Rustic One-Pan Sausage Casserole with a hint of chilli and soft, tender potatoes

- 8 sausages
- 2-3 green chillies slit in halves
- 1 onion cut into rings
- 1 large roma/jam tomato cut into rounds
- 4 medium potatoes cut into rounds
- 1 tspn dried mixed herbs
- salt
- pepper
- 1/2 tsp paprika
- 1/2 tsp chilli powder
- 1 tbsp olive oil
- 1/4 cup water
Add the oil to a large pan
Place the sausages in the pan with a 1/4 cup of water. Layer the potatoes, tomatoes and onion on top
Season the layers with the salt, pepper, paprika, chilli powder and mixed herbs
Cover the pan and allow it to sauté on low heat, for about 30 minutes
You can gently toss everything after it's cooked halfway. If you want everything browned at the end of cooking time you can remove the lid and turn up the heat for a few minutes
Serve with some fresh bread or eggs
- I used Chicken Sausages but you can use any sausages of your choice
