Indian-Style Bread Omelette

Quick and Easy Breakfast sandwich recipe made with a few simple ingredients

Ingredients

  • 2 large eggs beaten
  • 1 small piece of onion finely chopped
  • 1/2 tomato finely chopped
  • few coriander leaves finely chopped
  • 1 chilli finely chopped
  • 1 tspn butter
  • 2 slices bread of your choice
  • salt
  • pepper
  • cheese optional

Instructions

  • Melt the butter in a large non-stick pan on medium heat
  • Beat the eggs, season with salt and pepper and pour into the pan
  • Allow the eggs to become a little fluffy then add the onion. tomato, coriander and chilli., chilli powder. Season with more salt and pepper
  • Place the bread on top of the eggs
  • Gently flip it over. You can flip it over again once the bottom is cooked. Sprinkle some cheese on one slice of the bread. Tuck the sides of the egg in and fold the sandwich over
  • Cut in half and serve

Notes

  1. For the sake of presentation I flipped my toast inside out so the bread can be inside and the omelette on top
  2. You can do it whichever way you prefer and you can omit the cheese if you wish
