Harissa Chicken Traybake

Ingredients

  • 8 chicken pieces thighs and drumsticks
  • 1 red onion cut into petals
  • 1 green pepper cut into cubes
  • 1 red pepper cut into cubes
  • 4 medium potatoes
  • 3 large cloves garlic minced
  • 2 teaspoon paprika
  • 2 teaspoon ground cumin
  • 3 tablespoon harissa paste
  • 1/2 teaspoon black pepper
  • 2 birds eye chili (optional)
  • 1 teaspoon salt
  • 1 tablespoon honey

Instructions

  • Peel and cut the potatoes into wedges. Cover with some water and cook until slightly tender. This step is optional (see note 1)
  • Preheat the oven to 180 degrees Celsius
  • In a large bowl mix all the ingredients for the marinade, except the honey
  • Rub the marinade into the chicken and mix in the vegetables
  • Place on a baking tray, lined with foil and bake for 1 hour. In the last 10 minutes turn the oven up to 200 degrees celsius. In the last 5 minutes of baking brush the chicken with the honey
  • Drizzle some lemon juice when serving

Notes

  1. If you are confident the potatoes will cook in 1 hour then no need to pre-cook the potatoes. You can add it raw
  2. If you want some heat you an add a couple of birds eye chilli to this dish
  3. I love the slight sweetness to the chicken, however if you don't then omit the honey
