Peel and cut the potatoes into wedges. Cover with some water and cook until slightly tender. This step is optional (see note 1)
Preheat the oven to 180 degrees Celsius
In a large bowl mix all the ingredients for the marinade, except the honey
Rub the marinade into the chicken and mix in the vegetables
Place on a baking tray, lined with foil and bake for 1 hour. In the last 10 minutes turn the oven up to 200 degrees celsius. In the last 5 minutes of baking brush the chicken with the honey
Drizzle some lemon juice when serving
Notes
If you are confident the potatoes will cook in 1 hour then no need to pre-cook the potatoes. You can add it raw
If you want some heat you an add a couple of birds eye chilli to this dish
I love the slight sweetness to the chicken, however if you don't then omit the honey
