Green Bean Curry with Coconut Milk

Ingredients

green beans
sliced diagonally

butter ghee

fenugreek seeds

onion
finely sliced

green chilli
slit into halves
1
sprig
curry leaf

garlic clove
minced

turmeric

masala

tomato paste

coconut milk or coconut cream

tsp
garam masala
lemon juice
just a few drops
salt
Instructions
Heat oil, add onion, fenugreek seeds, curry leaf and chilli
When onion is translucent add garlic and fry for minute
Add tomato paste, masala and turmeric. Add a few drops of water and fry for a minute
Add coconut milk and simmer for 2 minutes
Add the sliced green beans and season with salt. Simmer on medium to low heat until green beans is cooked. If it gets too dry add a few drops of water
Drizzle a little bit of lemon juice and sprinkle the garam masala over the curry. Serve hot with rice or roti
