- 3 ripe bananas see note 1
- 1/2 cup melted butter
- 1 teaspoon vanilla essence
- 1/2 cup full cream yogurt
- 3 tablespoon milk
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon bicarbonate of soda
- 1&1/2 cup cake flour or all purpose flour
- 1/4 cup cocoa
- 1/2 teaspoon ground cinnamon
- 1/4 cup chocolate chips
Preheat oven to 180 degrees Celsius. Grease a loaf pan, line with baking paper and set aside
Melt the butter and set aside to cool slightly
Place the bananas in a large bowl. Using a fork mash the bananas well, ensuring there are no lumps
Add the melted butter, sugar, vanilla essence. Mix well using a whisk. Add the yogurt and cinnamon and mix
Sift in the cocoa, flour, baking powder and bicarbonate of soda. Mix using the whisk at first and then fold the dry ingredients into the wet ingredients with a wooden spoon. Do not overmix
Pour the batter into the loaf pan. Sprinkle the choc-chips on top. Bake for 1 hour or until a toothpick inserted comes out clean
Allow to cool slightly before turn it onto a cooling rack
- I sliced an extra banana and placed it on top of the batter before baking the banana bread. You can opt to do this although it is totally optional
