Eggless Chocolate Banana Bread

Ingredients

  • 3 ripe bananas see note 1
  • 1/2 cup melted butter
  • 1 teaspoon vanilla essence
  • 1/2 cup full cream yogurt
  • 3 tablespoon milk
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1&1/2 cup cake flour or all purpose flour
  • 1/4 cup cocoa
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chocolate chips

Instructions

  • Preheat oven to 180 degrees Celsius. Grease a loaf pan, line with baking paper and set aside
  • Melt the butter and set aside to cool slightly
  • Place the bananas in a large bowl. Using a fork mash the bananas well, ensuring there are no lumps
  • Add the melted butter, sugar, vanilla essence. Mix well using a whisk. Add the yogurt and cinnamon and mix
  • Sift in the cocoa, flour, baking powder and bicarbonate of soda. Mix using the whisk at first and then fold the dry ingredients into the wet ingredients with a wooden spoon. Do not overmix
  • Pour the batter into the loaf pan. Sprinkle the choc-chips on top. Bake for 1 hour or until a toothpick inserted comes out clean

  • Allow to cool slightly before turn it onto a cooling rack

Notes

  1. I sliced an extra banana and placed it on top of the batter before baking the banana bread. You can opt to do this although it is totally optional
