Cucumber and Herb Raita
Delicious Indian yogurt dip made with cucumber, chilli and fresh herbs

- 1/2 cup grated cucumber
- 1 cup plain yogurt low fat, full fat or Greek will do
- 1 small green chilli finely chopped
- 1 small clove garlic minced (optional)
- 1 tbsp chopped mint leaves
- 1 tbsp chopped coriander leaves
- 1/2 tspn ground cumin
- pinch of chilli powder
- salt
Grate the cucumber and drain all the excess water
In a medium bowl mix the cucumber with all the other ingredients
Refrigerate until ready to serve
