Cucumber and Herb Raita

Delicious Indian yogurt dip made with cucumber, chilli and fresh herbs

Ingredients

  • 1/2 cup grated cucumber
  • 1 cup plain yogurt low fat, full fat or Greek will do
  • 1 small green chilli finely chopped
  • 1 small clove garlic minced (optional)
  • 1 tbsp chopped mint leaves
  • 1 tbsp chopped coriander leaves
  • 1/2 tspn ground cumin
  • pinch of chilli powder
  • salt

Instructions

  • Grate the cucumber and drain all the excess water
  • In a medium bowl mix the cucumber with all the other ingredients
  • Refrigerate until ready to serve
