Creamy Butternut and Sweetcorn Bake

- 500 gram butternut
- 420 gram cream style sweetcorn
- 1/2 cup/125ml fresh cream
- 1 tspn chilli flakes
- 100 gram cheddar cheese
- salt
- pepper
- paprika
Steam the butternut until tender
Preheat oven to 180 deg celcius. Smash the butternut once cooked and place in a oven proof dish.
Pour the cream style sweetcorn over the butternut and roughly mix it together, don't over mix. Season with salt and pepper and sprinkle the chilli flakes
Pour the fresh cream over. Sprinkle the grated cheddar cheese on top. Sprinkle a little paprika over the cheese and bake for about 45 minutes.
- I usually add about a 1/4 cup of water to my chopped butternut and allow it to simmer on a low heat until soft and tender. You can cook it in the microwave too if you prefer
