Creamy Butternut and Sweetcorn Bake

A delicious, easy bake that you will make over and over again

Ingredients

  • 500 gram butternut
  • 420 gram cream style sweetcorn
  • 1/2 cup/125ml fresh cream
  • 1 tspn chilli flakes
  • 100 gram cheddar cheese
  • salt
  • pepper
  • paprika

Instructions

  • Steam the butternut until tender
  • Preheat oven to 180 deg celcius. Smash the butternut once cooked and place in a oven proof dish.
  • Pour the cream style sweetcorn over the butternut and roughly mix it together, don't over mix. Season with salt and pepper and sprinkle the chilli flakes
  • Pour the fresh cream over. Sprinkle the grated cheddar cheese on top. Sprinkle a little paprika over the cheese and bake for about 45 minutes.

Notes

  1. I usually add about a 1/4 cup of water to my chopped butternut and allow it to simmer on a low heat until soft and tender. You can cook it in the microwave too if you prefer
