Chocolate Coconut Biscuits

Ingredients

  • 250 gram butter
  • 8 tbsp castor sugar
  • 1 cup/250ml medium dessicated coconut
  • 2 cups/500ml cake wheat flour or all purpose flour
  • 3 tbsp cocoa
  • 150 gram chocolate to sandwich the biscuits together

Instructions

  • Preheat oven to 160 degrees celcius. Using a food processor cream the butter and sugar until creamy. Add the cocoa and and mix well
  • Add the coconut and four . Mix together until a firm dough is formed, dough shouldn't be crumbly.
  • Roll out, about 3mm thickness, scrape the top with a fork, a couple of times, cut into rounds. Place the biscuits on a cookie sheet lined with parchment paper and bake for about 20 minutes
  • Once biscuits are cool sandwich together with chocolate

Notes

  1. Please add the flour, a little at a time. You may not require all of it. The dough shouldn't be too soft but should be pliable, not crumbly
  2. You can melt your chocolate in the microwave at 20 second intervals
