Add the bread flour, yeast, sugar and salt to a large bowl. Mix it together
Make a well in the centre and add the melted butter. Slowly add the milk until you have a soft dough. If you are using a stand mixer it's ok to add all of the milk. If using your hands start with half cup and slowly add the remaining milk. You should have a sticky dough
Oil your hands and lightly dust a clean surface with flour and knead for 10 minutes. After 5 minutes the dough should be less sticky so don't be tempted to add more flour. After 10 minutes you will have a soft, smooth dough
Grease a bowl with oil and rub some oil on the dough, cover with cling wrap or a clean kitchen towel and place in a warm place to rise
Divide the dough into 12 equal pieces and roll into balls
Place in a lightly greased oven proof dish. Cover with cling wrap or a clean kitchen towel and allow it to rise for 30 minutes.
Preheat the oven to 180 degrees Celsius
After 30 minutes flatten the ball, just a little in the palms of your hands. Place a small square piece of cheese in the middle and bring the edges together. Pinch them to seal. Place back in the baking dish, seam side down.
Add the soft butter, garlic, parsley and thyme together. Brush over the dinner rolls
Bake for 25 minutes or until golden brown
Brush with more butter if you wish
