Servings: 8
- 3 cups/750ml brown bread wheat flour
- 2 tsp instant dry yeast
- 400 ml lukewarm water
- 1/2 tsp salt
- 1 tbsp granulated sugar
- 3 tbsp melted butter or vegetable oil
- mixed seeds black and white sesame seeds, sunflower seeds, pumpkin seeds
Add all the dry ingredients to a mixing bowl or the bowl of a stand mixer. Use a spatula and mix well
Pour in the water and melted butter and turn the mixer on. Knead on a low speed for 7 minutes or dough starts to pull away from the sides of the bowl
Grease a large bowl. Using oiled hands remove dough from mixer and form into a round ball. Rub a little oil on dough. Place in greased bowl. Cover with cling wrap and place in a warm place to rise, about an hour
After an hour punch the dough down. Divide into 8 pieces. Shape them as desired. Spray a little water on each roll and try and stick the seeds on top. You can gently press them in a little just so they stick to the dough. Place on a baking tray. Cover with a clean kitchen towel, leave to rest for 30 minutes in a warm place.
Bake at 180 degrees Cesius for 15 minutes. Brush with some extra melted butter if desired
- If you want softer bread rolls you can replace one cup of the brown flour with a cup of white flour
- The softer the dough the softer the rolls will turn out so don't be tempted to add too much extra flour
- If you are using active yeast you will need to dissolve it in some water to proof before using it
- I tried to keep these rolls as healthy as possible and it's why I used water only but if you want to be indulgent you can use about a 100ml of milk and reduce the water. You can also add an egg to the mixture and you can have dinner rolls
