- 700 gram baby brinjals each one cut into 4 pieces lengthwise
- 1/4 cup light olive oil or vegetable oil
- 1/2 tspn turmeric
- 1 large onion thinly sliced
- 6 large cloves garlic
- 2 sprigs curry leaf
- 6 green chillies slit in half
- 2 small roma tomatoes skin removed and blended
- salt
Wash the brinjals. Cut them in fours and soak them in some salted water
Heat the oil and fry the onion until translucent
Add the garlic, curry leaf and chillies and fry for a further minute
Mix in the turmeric
Add brinjals, season with salt. Lower the heat and allow the brinjals to cook. When slightly tender add the tomatoes and cook until tomatoes dissolve and brinjals are fully cooked
