Banana Chocolate Nut Muffins

Ingredients

  • 3 ripe bananas
  • 1/2 cup vegetable or canola oil
  • 1/4 cup buttermilk
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tspn vanilla essence
  • 1/2 tspn ground cinnamon
  • 1/3 cup chocolate chips
  • 1&1/2 cup cake wheat flour sifted
  • 1/2 tspn baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 cup toasted and chopped walnuts

Topping

  • 1/2 cup toasted walnuts
  • 1 tbsp sugar
  • 1 tbsp melted butter

Instructions

  • Preheat oven to 180 degrees Celsius. Line a muffin tray with cupcake liners
  • Smash bananas with a back of a fork and set aside
  • Sift the flour and baking powder and set aside
  • Mix half the walnuts with one tablespoon sugar and one tablespoon butter and set aside
  • In a large bowl mix together the oil, buttermilk, eggs, sugar and vanilla essence. Mix in the smashed bananas
  • Add in the sifted flour/baking powder, cinnamon, chocolate chips and half the walnuts. Gently fold it in.
  • Fill the cupcake liners with equal amounts of the batter
  • Sprinkle the walnut mixture on top of each muffin
  • Bake at 180 degrees Celsius for 15-20 minutes or until a toothpick is inserted and comes out clean

Notes

  1. You can add any other nuts you prefer
  2. The amount of sugar can be increased if you prefer a sweeter muffin
  3. It's best to use bananas that are as ripe as possible
  4. The chocolate chips is totally optional
  5. Do not overmix the batter
