Easy Macaroni and Cheese
I know someone is going to write me an essay to tell me I shouldn’t make Macaroni and Cheese this way. But I have learnt to ignore negativity and focus on the positives…haha!
Easy Macaroni and Cheese
For me a plain old Macaroni and Cheese is far too bland so I had to spice it up just a little. I haven’t changed the whole idea of Mac and cheese.
Let’s just say I added my own little twist so it can suit my tastebuds. But it may not be for everyone, be warned.
Actually I felt a little guilty eating this because it has so much cheese. It’s one of the reasons I don’t make it too often.
You know when you get to a certain age you have to slow down with the all that’s not so good for your body. Wish we could remain young and carefree forever.
Ingredients Required
For this recipe you will need some elbow macaroni, butter, cake wheat flour or all purpose flour, milk, chilli powder, paprika, onion powder, garlic powder, dried Italian herbs and some cheese.
I would have loved some onion in this dish but my kids hate onion so I decided to leave it out.
How to make this Easy Macaroni and Cheese
My sauce looks a little weird, compared to the usual white sauce. The spices makes it look more red than white but don’t despair it still tastes amazing.
Any sharp cheese will work for this dish, I used cheddar cheese. Topped it with some mozzarella, however you don’t have to.
Everything was cooked on the stovetop, however I did pop it into the oven for 10 minutes. I used the grill function just to allow the cheese to melt a little.
You can totally omit this step. In fact if you prefer it more saucy I would suggest you leave out the oven step altogether.
Please do not add the cheese whilst the sauce is still cooking. It will curdle.
I have done this before and trust me it looked gross. It also does get a little thick in the oven and looks slightly curdled.
So if you are really fussy about the look of your macaroni I suggest cooking it completely on the stovetop.

Easy Macaroni and Cheese
Ingredients
- 2 cups elbow macaroni
- 3 tablespoon butter
- 1 teaspoon paprika
- 1 teaspoon chilli powder
- 2 teaspoon dried Italian herbs
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 3 tablespoon cake wheat or all purpose flour
- 3 cups milk
- salt
- pepper
- 2 cups grated cheddar cheese
- 1 cup mozarella cheese
Instructions
- Cook pasta as per package instructions, in some salted water
- Melt butter in a large pan on low heat. Add the garlic powder, onion powder, chilli powder, paprika and Italian herbs. Allow it to fry in the butter for about a minute
- Add the flour and cook for about 2 minutes. Slowly add in the milk and mix
- Simmer until the sauce thickens, should take about 15 minutes
- Remove from the heat and add the cooked pasta and the cheddar cheese
- You can sprinkle the mozzarella cheese on top and pop it into the oven, using the grill function until the cheese melts and turns golden brown. This takes about 10 minutes and totally optional
Notes
- You can make this dish totally on the stovetop. If you feel the cheese is too much you can reduce it although it is Macaroni and Cheese and it needs loads of cheese
- Do not add the cheese to the sauce whilst it's still cooking. It will curdle and look a mess
- I prefer to remove the sauce from the heat after it's cooked and add the pasta first and then the cheese just to be safe
- The oven step is totally optional, if you're prefer a more saucy pasta then omit this step as the sauce does thicken in the oven
