I’ve had enough of testing Diwali recipes. Today I needed something a little different to all that sweet stuff. Nando’s Inspired Chicken it was.
Nando’s Inspired Chicken
There are many Nando’s Inspired Chicken recipes but I like to keep mine simple. When I see a ton of ingredients in a recipe it totally puts me off cooking.
The biryani recipes are the exception. Some people can deal with complex recipes and a whole pantry of spices in one dish, me not so much…Lol!
I still maintain you don’t need you whole kitchen pantry to make a great tasting dish. Nor do you need fancy gadgets.
Yes, I have some fancy gadgets but that took me years of hard work to get it. I never owned even a fancy mixer until my hubby bought me one for one of my birthdays.
He has now upgraded my mixer, only because he knows how much I love being in the kitchen. But I actually feel guilty using it because all my life I’ve used my hands and inexpensive stuff in my kitchen.
My mum also never had fancy gadgets but yet her food still tasted amazing. You will see a lot of my recipes are fairly simple and most ingredients are easily accessible.
Yes, some of my recipes are a little more elaborate and may need a few expensive ingredients. But I keep the majority simple because I want everyone to enjoy my recipes.
Also my recipes reflect exactly who I am. I am a simple person and even when I eat out I find the simplest things to eat.
Just because I don’t like fancy doesn’t mean I never cook elaborate dishes. I do but not as often as my boys would like me to.
Ingredients Required for this recipe
I added a little more chicken to this recipe because I know my boys will look for leftovers tomorrow.
The Nando’s sauce has a whole lot of flavor already so I just wanted to enhance that flavor just a little. So I added some paprika, cumin, Portuguese chicken spice, garlic, birds eye chilli, salt, pepper, Nando’s sauce and fresh cream.
I added an onion just for some added flavor. I also didn’t add a whole lot of cream but feel free to increase the amount should you wish.
How to make the Chicken
It is best to marinate the chicken for a few hours or overnight. If you’re in a rush one hour of marinating time is also fine.
Shake off the excess marinade and drizzle some olive oil in a roasting pan. The chicken is placed in the pan and baked for 45 minutes to an hour.
The chicken can be basted in between cooking time with the excess marinade. In the last 15 minutes of cooking time half cup of sauce and cream is mixed together and pour over the chicken.
This chicken is so good you will be licking your fingers. But if you can’t handle the heat I don’t recommend you make this dish.

Nando's Inspired Chicken
Ingredients
Chicken Marinade
- 12 pieces chicken thighs and drumsticks
- 1 tablespoon paprika
- 1 tablespoon Portuguese chicken spice see note 5
- 2 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large cloves garlic minced
- 3 birds eye chilli
- 1/2 bottle Nando's hot sauce 125 gram to be exact
- 1 teaspoon salt
Sauce
- 1/2 bottle nando's sauce 125 gram to be exact
- 1/2 cup fresh cream
Extras
- 2 tablespoon olive oil
- 1 onion (chopped into chunks)
Instructions
Marinating the Chicken
- Make a few slits in the each chicken piece. Place the chicken in a large bowl. Add all the other ingredients and mix it into the chicken.
- Place the chicken in the refrigerator to marinate overnight or you can marinate for just an hour
- Preheat oven to 180 degrees celsius. Drizzle 2 tablespoons olive oil in a roasting pan. Shake off the excess marinade from the chicken and place them in a single layer in the pan
- Cut the onion into 8 petal like shapes and toss it with the chicken. Bake at 180 degrees celsius for 35 minutes. Baste the chicken with the excess marinade in between baking time
- After 35 minutes mix the remaining half bottle Nando's sauce and the fresh cream together and pour it over the chicken. Bake for a further 15 minutes or until the chicken is fully cooked. If you pierce a piece of chicken the juices should run clear once cooked
Notes
- If you prefer a more creamy chicken you can increase the amount of cream to a cup
- I know not everyone may have access to Nando's sauce so any Portuguese sauce or even some hot sauce could work. You will have to use your discretion as to how much you will require
- You can leave the skin on the chicken if you prefer. To crisp up the skin turn on the oven to 200 degrees celsius and bake the chicken for 20 minutes. Then reduce to 180 degrees celsius and bake further until cooked
- I used chicken thighs and drumsticks for this dish, however I added 2 chicken breasts as my fussy 20-year-old doesn't eat chicken on the bone. It cooked fine so therefore a whole chicken cut into pieces will work fine
- If you do not have portuguese spice you can omit it. I promise the dish will still turn out delicious.
