Easy Lamb Stew
I know, you must think I’m crazy, making lamb stew in summer. My 10-year-old has been nagging me to make him this Easy Lamb Stew for a few weeks now.

I’ve brushed off his request but today the weather was slightly cooler, a little overcast and looked as if it was going to rain. So I thought it was my chance to get that Lamb Stew out-of-the-way.
Hopefully he won’t ask again until Winter arrives. You should have seen that face light up when he got home from school.
It makes it all worth it if my kids are happy. It’s also a good way to get them to eat their veggies, what’s more nutritious than a wholesome stew loaded with veggies.
If I had more time in the day I would make some freshly baked bread rolls to go with the stew. Nothing beats dunking some fresh bread into all that delicious sauce.
I don’t have time so they will have to settle for store-bought bread rolls.
How to make this Easy Lamb Stew
It is indeed an easy recipe. I sometimes cook it on the stovetop, if I am in a rush to get it cooked.
If you do decide to cook it on the stovetop you may require and extra cup of stock, depending on how thick you like your stew.
Today, however I cooked the stew in the oven. I must say it does make a difference to the flavor, slow-cooking makes everything so delicious.
Also note that the cooking time on the stovetop will be different to the oven. Your stew can be ready in an hour on the stovetop.
You can’t beat the comfort you get from a good home-cooked stew, especially when it’s bursting with flavor. Not that I eat lamb.
The smell was enough to tempt me into eating lamb again…haha! I added carrots and potatoes to my stew but you can use any veggies of your choice.
Please be careful when adding veggies to the stew, as some cook quicker than others. It’s also best to let your stew simmer on low heat until you get melt-in-your-mouth lamb.
You can serve this lamb stew with rice or some fresh bread rolls. I have a rice lover and a bread lover in my home.
Both boys are so different with their eating habits. The younger one definitely has South Indian blood running in his veins, he can’t live without rice, definitely my son!

Easy Lamb Stew
Ingredients
- 700 gram leg of lamb or lamb shoulder cut into cubes, excess fat trimmed
- 4 tbsp flour
- 1 onion finely chopped
- 1 tsp fresh thyme leaves
- 4 large garlic cloves minced
- 2 bay leaf
- 1 tspn chilli powder
- 3 cups lamb or vegetable stock (see note 3)
- 1 tbsp butter (optional)
- 4 tbsp oilve oil
- 2 tbsp tomato paste
- 4 medium carrots sliced in rounds
- 2 potatoes cut into small cubes
- salt
- pepper
- parsley to garnish
Instructions
- Preheat oven to 180 degrees Celsius. Heat oil on medium heat. Mix the flour into the lamb cubes and season with a little salt and some pepper. Brown the meat.
- In the same pot melt the butter add the onion, bay leaf and thyme. Once onion is translucent add the garlic and tomato paste, sauté for a minute
- Add the chilli powder and fry for a minute.
- Add the potatoes and carrots. Cook for 5 minutes with the lid open
- Add the stock and bring to a boil. Cover and pop into the oven and cook for 1 hour 50 minutes or until the lamb is tender
Notes
- You can use leg of lamb or lamb shoulder for this stew. I prefer some bone for flavor, however you can use boneless lamb too
- If you do eat beef you can use beef stock instead of lamb stock.
- Although I recommend 3 cups of stock you may require a little more, depending on the consistency you prefer
- With all the load shedding we are experiencing you can cook this dish entirely on the stovetop. However, when you add the stock allow the lamb to cook for 30 minutes then add the carrots and potatoes. Cook for another 30 minutes or until lamb and veggies are soft and tender
